Healthy Cauliflower Fried Rice
When you're trying to cut down on carbohydrates, it can seem a little daunting. One of my favorite ways to replace heavier starches is by using vegetables! I know zucchini noodles have been a healthy favorite for many, but I have a level up for you. Healthy cauliflower fried rice is SO easy, and so yummy. It only takes 15 minutes to make, and it's perfect to customize with your favorite add-ons!
I always buy frozen, organic pre-cut cauliflower rice in bulk. I'm sure that pre-cut fresh cauliflower or even making your own tastes better, but for me, someone that likes the flexibility of throwing something together on a whim - the frozen stuff works best. I also keep different varieties of mixed frozen veggies on hand, they work perfectly in this quick, easy, and healthy dish. Feel free to add a protein, I love it with pulled rotisserie chicken, steak, or shrimp.
What you need:
2 eggs or 3 egg whites
1Tb Sesame oil
4c Cauliflower rice
2 Green onions, sliced
3 Garlic cloves, minced
Salt & Pepper to taste
3Tb soy sauce, or more to taste (Tamari for Gluten Free, Coconut Aminos for Paleo/Whole30)
What to do:
- Whisk eggs and 1 tsp sesame oil in a small bowl and set aside.
- Heat 1 tbsp sesame oil in a pan. Add cauliflower rice and, frozen vegetables, and green onions. Cook until tender. (About 3-4 minutes.)
- Add the garlic and cook for one minute. Push the mixture to the edges of the pan to create a circle. Cook the eggs in the circle. Stir to scramble while cooking. Toss all together.
- Drizzle with soy sauce and serve.
Once you're dished up, garnish with extra green onions and sesame seeds. If you want to add in a few more veggies, I suggest peas, peppers, and carrots. When it comes to variations, get creative and use up other leftover ingredients you may happen to have on hand!
